{"id":194,"date":"2009-04-27T07:27:17","date_gmt":"2009-04-27T15:27:17","guid":{"rendered":"http:\/\/www.momadvice.com\/aldi\/?p=194"},"modified":"2009-04-27T07:27:17","modified_gmt":"2009-04-27T15:27:17","slug":"lemony-rice-pilaf","status":"publish","type":"post","link":"https:\/\/www.momadvice.com\/aldi\/index.php\/sides\/lemony-rice-pilaf\/","title":{"rendered":"Lemony Rice Pilaf"},"content":{"rendered":"<p><strong>Lemony Rice Pilaf<\/strong> (Courtesy of Recipezaar)<\/p>\n<p>1 teaspoon vegetable oil, preferably canola oil<br \/>\n1 cup finely chopped onion<br \/>\n1 1\/2 cups long grain white rice<br \/>\n3 cups chicken stock (vegetable stock makes this vegetarian\/vegan)<br \/>\n1 grated lemon, rind of<br \/>\n1 tablespoon freshly squeezed lemon juice<br \/>\n1\/2 cup coarsely chopped flat-leaf Italian parsley<br \/>\nfresh ground pepper<\/p>\n<p>In a heavy saucepan, heat oil over medium heat and cook onion for 5 minutes, or until softened. Stir in rice, then stock, and bring to a boil. Reduce heat and cover; let simmer for 20 minutes, or until rice is tender. Stir in lemon zest, lemon juice, and parsley; taste and add pepper if you wish.
