Pancakes! We make a ton on a Saturday or Sunday morning. We all eat a big breakfast and save the leftover ones for quick breakfasts for my 13-month-old’s before daycare. One box of pancake mix goes a long way!
Homemade Bisquick Mix
Copycat Bisquick Mix
8 Cups of Flour
1/4 Cup Baking Powder
1 1/4 Cup of Non Fat Dry Milk
1 Tablespoon of Salt
2 Cups of Vegetable Shortening
Mix together dry ingredients then cut in the shortening until it looks like a coarse meal. Store.
Now you don’t have to buy it!
I would LOVE this book! I’ve been looking at it for weeks. I hope I win!
Frugal Recipe: “Homemade Pizza” – instead of buying pizza crust or making it, we use english muffins, then add toppings
Pizza Soup
Ingredients:
1 pound of lean ground beef
4 10.6 oz. cans of condensed tomato soup, undiluted
6 1/2 cups of water
1 jar of spaghetti sauce
Italian seasoning
2 cups of shredded cheese (or cheese sauce)
Brown the ground beef and drain the fat. Add the soup, water, spaghetti sauce, and seasoning. Bring to a boil. Reduce heat and simmer for 15 minutes. Add cheese and serve.
This sounds like what I need.
One frugal recipe that we like is
Crockpot Chicken Stroganoff.
1 lb boneless skinless chicken (chunks)
1 pkg. dry italian dressing mix
1 T. butter or margarine.
Throw them in crockpot on low for 5 hours.
Mix in 8oz cream cheese
and 1 can cream of mushroom soup. Cook on high for 1/2 hour.
I serve it over egg noodles.
we love beans in our house, but i’m soaking some dried ones right now – they’re WAAAY cheaper than buying cans!
Mac and Cheese… Cooked mac noodles, cheese and milk. throw in oven safe dish and cook on 350 for 20-30 min. I also like to add ground beef and pasta sauce, if I have them on hand.
We fix a lot of meals featuring beans and corn-bread. It’s just me and my daughter, so we eat what we like – but it’s a lot of the beans….lol
“Omelets in a Bag”
1Zip-lock freezer bag quart size
2.Black Sharpie pen to write each name on outside of bag.
3.2 eggs per bag
4.Shredded cheddar cheese, mushrooms, bell peppers, olives…whatever each individual likes. Zip up and squish lightly. Place bags in pot of boiling water, boil 12-15 minutes or until done.
5.Carefully take out of pot and put on plate.
6.Enjoy.
Thank you!
Quesadillas- just butter one side of a flour tortilla, add shredded cheese to the unbuttered side, fold over, and cook in a skillet over medium till light golden brown on both sides. You can add whatever you want- black beans, canned chicken, leftover taco meat, I’ve even added canned tuna, and my kids liked it! It’s very good with cheese only if that’s what you prefer. Super quick and cheap too!
We like hobo dinners:
1 lb ground beef, formed into 4 patties
4 potatoes, thinly sliced with skin on
1/2 onion, thinly sliced
2 carrots, sliced
2 cups frozen peas, divided
Lowry’s Seasoning Salt
salt
pepper
4 large rectangles of aluminum foil
Place 1 potato on each piece of aluminum foil. Season with Lowry’s, salt and pepper. Next layer hamburger patty, onions, 1/4 of the carrots and 1/2 cup peas onto each pile of potatoes. Seal packages well. Place on a rimmed baking sheet and bake at 350 degrees for 1 hour. And you usually don’t have to wash the pan!!
we make baked oatmeal instead of using cold cereal lots of mornings! yum!
Homemade Instant Oatmeal
10 c. quick oats
1 c. dry milk
1/2 c. brown sugar
2 c. raisins (or other dry fruit)
1 c. wheat germ
1 c. walnuts (optional)
1 T. cinnamon
Mix in a large bowl. Store in an airtight container. Serve 1/2 c. mix in a bowel and add boiling water. Sit for 1 minute and then ready to eat.
This is a fast, inexpensive, healthy breakfast for our family!
I could definitely use this! Good luck everyone!
you know, i don’t have a specific frugal recipe, but my frugal recipe tip is that i prepare at least one dinner meal a week that doesn’t have meat in it. it save a lot over the month. for instance, i would meatless spaghetti sauce, or bean burritos instead adding ground beef. it’s healthier too.
Chicken and rice is my family favorite!
My newest frugal recipe is falafel–there are a variety of recipes out there, but it is basically a can of garbanzo beans (or the equivalent), a cup of bread crumbs, an egg to hold it together, onion, garlic and spices like cumin and parsley. Mix everything together and form into little flattened balls. Fry them up and eat them for days! Yummy, cheap, and meatless!
We take all of the leftovers such as mashed potatoes, chicken and peas and make patties out of them. Then you brown them up a little and you have a quick meal and no waste. Thanks for the chance.
Grilled chicken ceasar salad. Make everything from home including the croutons and grow your own lettuce. Cheap!
Oriental Ramen Noodles
Odds and Ends of veggies from the fridge
Leftover chicken
Soy Sauce
Stir fry all together- and it is one tasty dish!
Make two meals out of one meat. For example, broil or grill pork chops one night adding an extra chop or two then use the leftover pork chop(s) to make stirfry the following night. Easy and frugal!
Chicken in the Crockpot (Wonderful!)
Simply place 4-6 frozen chicken breasts in the crockpot, along with 1 32 oz. box of chicken broth and a can of cream of chicken condensed soup. Let this cook for 5 – 8 hours. Pull chicken breasts out and use in tacos, as chicken sandwiches (bbq style, buffalo style, or plain), chicken pot pie, chicken rice soup, just to name a few. I promise this will be the most tender and best chicken you’ve had!
Use leftovers!! I make stir-fry and “leftover stew” on a regular basis. Our favorite frugal recipe though is beans and cornbread. But, make your beans in the crockpot…dried beans are WAY cheaper than canned (and they taste better, too!)! Add some ham, bacon, or a ham bone for added flavor.
Breakfast cereal always works for us.
I purchase a cooked chicken at Walmart for $4.98 and add 1 box of instant potatoes for .98, it feeds our family of 5, and there is leftover chicken for chicken n’ noodles for another night.
I also serve breakfast for dinner.
Bow-tie Chicken (As my husband calls it)
Chicken breasts (or any sort of chicken on hand)
1 Box bow-tie pasta
2 cans diced tomatoes (preferably with garlic and olive oil included)
Put chicken breast and cans of tomatoes in crock-pot.
Let cook as long as needed (I put it on low and ignore it all day!)
When close to serving time, fix bow-tie noodles as directed.
Shred chicken and put back with tomato mixture.
Serve chicken and tomato mixture as “sauce” over pasta.
Salt and pepper to taste. Add parmesan sprinkles if desired.
(We have also added chunks of sautéed zucchini when we have some on hand. Also very good.)
Yummy! And a crock-pot meal too!
We made home made tortillas tonight.
4 cups flour
1 1/2 t. salt
1 1/2 t. baking powder
1/3 cup shortening
1 1/4 cup water
mix, knead, let rest about 10 minutes.
divide into 12 balls roll out and cook in a skillet. I like to do mine in a cast iron skillet. just a couple minutes on each side.
My 17 year old son rolled them for me today it does take a little muscle to make them nice and thin. Every one in my family thinks these taste better than store bought. We made black bean burritos with them tonight.
oops sorry just realized I missed the dead line
When bone in chicken breasts go on sale I make chicken broth. I use some of the chicken and broth to make chicken and dumplings that night. I freeze the rest of the broth for future use. Left over deboned chicken can be frozen with a little broth so it doesn’t dry out and used in recipes calling for leftover cubed chicken.
When I need to stretch our grocery budget . . . one meal I make and my boys love is Paula Dean’s goulash . . . it’s amazing and flavorful and so inexpensive. You got to love Paula!
Hamburger Hash
brown 1 lb hamburger
add sliced potatoes (already cooked is goo)
onion
salt, pepper, leftover gravy if ya’ got it
my brother adds peas but I consider that heresy
Crockpot spaghetti sauce. Throw some hamburger, sausage, couple of cans of pureed tomatoes, tomato paste and a can or two of tomato sauce and some spices and we’re good for about three meals. It freezes well, too. Great for a night when I’ve worked all day and we get home late.
We do lots of thrifty things. Thursday night is buffet night (which means leftovers from the week). I make red beans and rice with dry beans. Also, I will cook a bunch of beans, then put them in ziploc bags in 2 cup portions which equals a can of beans. Then I freeze them. I make our own pizza crust. In the summer, one night per week is veggie night — no meat; we love our veggies! I have made my own egg noodles and lasagna noodles (which makes an amazing lasagna). Most of my recipes I cannot post, as they are copywrited, but these are a few ideas.
We love “fridge frittatas”…this is a great way to use up little leftover bits of veggies and meat at the end of the week. The kids love them and I get to sneak in vegetables that they don’t eat easily on their own.
I like to start with sauteeing chopped onions and a little garlic in butter or olive oil (better for you!), then add in whatever other ingredients I can find. Almost always there’s broccoli, diced chicken, carrots, and chopped tomatoes, but you can use whatever you have on hand. Sometimes I use frozen veggies too – just saute a little longer. Crack enough eggs to feed your family in a bowl, scramble them up and pour on top of the sauteed veggies and meat. At this point you can scramble them and have an open-faced omelet (easiest and super-fast) or let the bottom and edges of the eggs set and then finish them off in the oven (be sure to use an oven-proof pan!). I also like to add a spoonful or two of salsa and some cheese if I have it.
Serve with toast or biscuits, extra salsa for topping, and you have an easy, frugal one dish meal!!
Frugal Recipe = Skillet Fritatta
(breakfast for dinner)
I will use one dozen eggs for (4-6) people – Pam skillet – add eggs, salt, pepper and garlic to taste – add leftover veggies – mushrooms, green onions, tomatoes, potatoes (cubed), and left over meat (have used chicken, port, and beef) – cook until desired consistency (I like mine drier than most) – sprinkle with shredded cheddar cheese.
I served with toast or tortillas and salsa.
Its cheap – you get to use up the leftovers and its yummy!
THANKS for the opportunity to win!
Melissa
okay so it isn’t a recipe, but what I do is I buy roasts when they are on sale for 1.99lb or less, then I have the meat dept. grind it up for me so I have cheaper hamburger and it also taste a lot better and you can use it for anything youd use ground beef for!
We do our own pizzas using refridgerated biscuits from Aldi and add cheese and whatever toppings they feel like (usually just salami).
one frugal recipe that you prepare in your house.
We make Koubly-Cobbly in big batches and then snack on it throughout the week. What’s that weird word you ask? It’s actually just peanut butter and jelly mixed together and then smeared on the cracker of your choice. Simple, but messy. A big hit around here!
Wow lots of great ideas. I love leftovers and will make a roast in the crock pot then continue using the meat for sandwichs.
Preacher Lady’s Soup
1 package cream gravy mix
milk or water
make gravy to package directions
thin to desired thickness
Clean out the fridge
I take left over chili, top it with a cornbread mixture, bake it, and we have chili casserole.
Bean and rice burritos: Make a cup or two of Minute rice. Once cooked, put rice, drained and rinsed black beans, diced tomatoes (undrained) and taco seasoning in a skillet. Fill tortillas with mixture. Top with cheese, sour cream, salsa, tomatoes, lettuce, olives, avocado, or whatever else you like, and chow down. This makes a lot, so I eat it for several lunches and dinners.
I love to make a big pot of crab soup using Hanover crab soup mix and adding some old bay. Put it all in the crock pot with your crab meat and you have dinner for 2 days. It is awesome and soooo easy .
We try to be as frugal in our household as possible now days. Whatever we make for supper one night we use the leftover ingredients the next night to prepare a whole different meal. One quick and easy meal we fix is Hamburger/Cabbage Hash
1 head cabbage-cut into bit size pieces
1 lb. buger-brown and drain off grease
1 pkg. dry soup mix-any flavor you like
1 lg. onion-diced
Brown burger and onion. Drain off the fat. Place back in skillet. Add cabbage and soup mix. I add just a little water as to keep it from actually frying. Cook until cabbage is tender. Serve. It’s kind of a meal all in one.
Something i make and my 3 kids LOVE to eat is Tuna and cheesy noodles.
1 box mac n cheese(prepare noodles from directions on box)
Add 1 can of peas(drained)
add 1 can of carrots (drained)
add can of tuna(drained)
Mix it up. i serve with a fruit and bread and butter. This tends to make a lot so i usually freeze the leftovers for another time. Easy ,cheap and quick dinner.
I make chicken n rice caserole.
2-3 boneless chicken breast or tenderloins cut into small pieces. 2 cups instant brown rice (uncle ben’s has a great instant one and you can usually find coupons for it).
Add vegetables of your choice.
1 can cream of chicken soup
1 can chicken broth
back in oven about 1 hour. Hint, I usally a lot of left overs to make this dish.
Our frugal recipe is mixing TVP, brown rice, and red beans for a beans and rice dish with an extra kick of protein. I also always add in whatever vegetables I have on hand, such as onions, tomatoes, or celery.
This cookbook looks great! Thanks for the giveaway!
Grow your own food. Even if it’s in a pot on a patio. I don’t grow much, but one of the foods I grow is carrots. My daughter loves carrots. The cost of the seeds are cheap! They can even be left in the ground after it freezes. Heck! They even taste better after a couple good freezes (I just pulled some last week).
We cook a lot of dried beans. My 20-mo old daughter loves just about all of them and they are easy to cook in the crockpot.
Easy shepherds Pie: Mashed potatoes on bottom (from instant), browned ground beef, can of green beans, can of cream of mushroom soup in middle, can of bisquits on top. Bake for 15 minutes @ 350.
We make what we call Creamy Chicken. It is just Cream of Chicken soup, rice, and about 3 lbs of chicken. We make enough that we can have 2 dinners and 1 lunch out of it.
When our grandchildren and family come over we make lots of waffles. A small box of waffle mix goes a long way. They love eating them when they can put their own strawberries and whipped cream on them. It becomes a very inexpensive treat.
I’d love to win this book. My frugal recipes start with basic ingredients that are bought when on sale and with coupons.
For example, a can of tomatos can be used for pizza sauce, or with pasta or drained and put in rice for a “poor man’s paella”:
1 10 oz bag of yellow rice
1 can of chopped tomatos, drained
1 can of peas
4 chicken legs
2 sausage links
1 can of tuna (or shrimp or other fish)
Add water to rice according to directions and add tomatos, chicken and sausage. Bake for 45 minutes, then add other ingredients and bake for another 5 minutes.
Great for left-overs and taking to work lunches.
My husband hates beans, so I have to be creative when trying to make cheap dinners. This is my personalized Spicy Beanless Chili.
1 pound ground turkey (or ground beef)
1 1/2 cups of miscellaneous chopped veggies (great to clean out the fridge)–peppers, onions, carrots…
2 garlic cloves, minced
1 14.5 oz can fire roasted tomatoes
1 14.5 oz. can tomato sauce
2 tablespoons chili powder
1 teaspoon dried oregano
1 teaspoon paprika
1/2 teaspoon ground cumin
1/2 teaspoon cayenne pepper
1/8 teaspoon salt
In a large saucepan, cook beef, veggies and garlic over medium heat until meat is no longer pink; drain. Stir in remaining ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 45 minutes or to desired thickness. This makes enough for 2 dinners and a few lunches for approximately $7 total!
Our quick and cheap go to is scrambled eggs and toast. It’s always a big hit!
Chicken Breasts (bought on sale and then frozen- pull out what you need), Jar of BBQ Sauce, Crock Pot on Low all day. Make a pkg noodles (or some rice) with butter and spices and Add a Side Veggie. Easy, Simple and adaptable to what you have on hand.
Pizzghetti:
Leftover Spaghetti and Sauce from night before.
1 c. Mozzarella Cheese, shredded
20 Pepperoni Slices
Favorite Pizza Toppings
Parmesean Cheese, Grated
Mix the toppings and leftovers together and spread in an 11×9 casserole dish. Top with Mozzarella cheese and then Pepperoni. Sprinkle parmesean cheese on top, and bake at 350 until warmed through. Great way to use up leftovers!
My children are constantly having friends over and wanting something sweet to eat – One can peaches and one box cake mix – makes a yummy peach cobbler.
We make a lot of things with beans – I soak and cook a pound of dried beans and then freeze the beans in 2 cup portions, then I use the beans in various recipes – one recipe has elbow macaroni, diced tomatoes, tomato sauce, beans, corn and spices.
I have been wanting this book! I hope I win!
Tomato and avocado salad: 2 tomatos and 1 avocado per serving, plus feta cheese. Slice tomatos and avocado, sprinkle with crumbled feta cheese and your favorite seasoning. I often eat it for dinner, and find it to be light and filling at the same time. I shop for the ingredients at Food4Less and Henry’s.
I make all of my own spice mixes like taco seasoning, onion soup mix, ranch dressing mix etc. Cheap and you know what is in them! Here’s one:
Ranch Dressing Mix
1/2 cup dry buttermilk
1 tablespoon dried parsley, crushed
1 teaspoon dried dill weed
1 teaspoon onion powder
1 teaspoon dried onion flakes
1 teaspoon salt
1/2 teaspoon garlic powder
1/4 teaspoon ground pepper
Blend in blender or food processor until smooth. Store in an air tight container.
1 T equals 1 envelope of ranch dressing mix
crockpot chicken and dressing. take left over chicken and tear apart or shred. make a skillet of cornbread and crumble into crockpot, add 1 box of stuffing mix(aldi’s has a really cheap brand), 2boiled eggs chopped, chicken broth, cream of mushroom soup, and shredded chicken. cook on low for about 8 hours. this is so moist and cheap and makes a huge crockpot full.
At my local deli a pound of chicken salad is especially pricey so i make my own bbq chicken salad. Baked chicken breast cut up (good way to get rid of left overs) onion, bbq sauce, mayo, red pepper flakes, celery and minced chiles for a little extra spice. Its quick, easy, affordable and leftovers are great!
You can never go wrong with a roast.
First night – roast beef dinner.
Second night – hot roast beef sandwiches or beef tips and noodles. Hot, comfy meals with one cut of meat.
Ham & Cheese Calzones
Roll out refrigerated pizza dough on a cookie sheet. Stack with deli ham and sliced cheddar cheese. Fold the ends together and lay seam side down. Cut three slits in the top, brush with a beaten egg, and sprinkle Parmesan cheese. Bake for a half hour at 350 degrees. Thanks!
The easiest and cheapest meal that I make is this chicken thing (I have no idea what to call it)
I take skinless, boneless chicken breasts, place them in a baking dish, smother them with mayo and then put parmesan cheese on them. Bake at 350 for about 45 minutes. The chicken comes out really really juicy and tender. I also use fat free mayo, which I already have in the house and don’t need to purchase specifically for this meal.
Hubby makes home made spaghetti sauce. When we make dinner I always take leftovers at least one day if not two for lunch the next day.
When we go camping, I always make scrambled eggs, hashbrowns and have cheese, salsa and tortilla shells for breakfast burritos. This makes a lot and feeds a my hungry kids….
Kielbasa Soup
In a dutch oven over medium high heat
1 lb kielbasa sauteed in olive oil.
Add 1-2 cloves chopped garlic
Add 3 cans cannelinni beans drained, rinsed
Add 3 cups chicken broth
Add 10 oz fresh spinach
Simmer 10 minutes and season to taste with salt and pepper
Serve with parmesan cheese.
Spaghetti is always a low budget meal. I do add my own spices and onion if I have one handy. I do take hamburger helper or any pasta-in-a-box meal and add an extra handful of my own pasta and stretch it just a little more. The spice/flavor packets are always a little strong for me anyway so it evens out in the end. And who doesn’t like good old grilled cheese and tomatoe soup?
French Toast is our frugal recipe. You can use kinda old bread, a few eggs and a splash of milk and you’ve got PLENTY of food. We use powdered sugar on top or cinnamon in the egg/milk mixture to spice it up some.
The frugal meal in my house is spaghetti with meat sauce. Pound chop meat: $3.29; spaghetti: 79 cents, jar of sauce 99 cents. Dinner for four (plus leftovers): $5.07
Christmas Popcorn
Pop one regular size bag of popcorn and remove unpopped kernals. Melt one bag of white choclate morsels for 1 minute in microwave. Mix 1 package of dried cranberries, 2 cups of canned peanuts, and popcorn together with white choclate. Spread on wax paper and let cool. Break apart after cooled and enjoy. This is a cheap easy recipe to make for gifts for Christmas. You can buy tins from a thrift store to package it in. It is wonderful!!
Quick Ground Beef and Rice
1 LB Lean Ground Beef
1 Can Cream of Mushroom Soup
4 Cups Cooked Rice
Brown ground beef and drain grease. Add can of soup and warm through. Spoon over cooked rice.
White Chili!
1 large jar Great White Northern Beans
1 jar mild salsa
1 jar med salsa
4 cooked chicken breasts cubed
8 oz shredded cheese
Throw it all in the crockpot and cook on high for one hour! Dinner is served!
My whole family loves this recipe for Whole Wheat Buttermilk pancakes. I usually double for my family of 5. Leftovers still taste great.
3/4 c. all purpose flour
3/4 c. whole wheat flour
3 Tbsp. sugar
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp salt
1 1/2 c. low-fat buttermilk
1 Tbsp. vegetable oil
1 large egg
1 large egg white
cooking spray ( or butter or margarine)
Combine sugar and dry ingredients in a large bowl, stirring with a whisk. Combine buttermilk, oil, egg and egg white, stirring with a whisk; add to flour mixture, stirring until just moist.
Heat a nonstick griddle or skillet coated with cooking spray over medium heat. Spoon about 1/4 c batter per pancake onto griddle. Turn pancakes over when tops are covered with bubbles and edges look cooked. Serve with syrup and butter.
I love quick meals and my kids love mac n cheese. Here’s my recipe for mac n cheese.
1 lb sharp cheddar cheese
1 lb of pasta (rotini is what we use)
1 tablespoon of cornstarch
2 tablespoons of butter
1 can petite diced tomatoes
2-3 cups of milk
Start the sauce using the butter melted and the flour. When is makes a paste add milk and wisk well to get rid of lumps. Add chunks of cheese and stir constantly until all cheese is melted. Add 1 can of drained petite diced tomatoes to cheese and turn heat to warm just to hold heat until pasta is boiled. Boil pasta, and combine with sauce. Sometimes we throw it in the oven too.
Hope you enjoy and we would love to enter the contest.
I make grilled chicken breasts, with a premixed seasoning sprinkled on them, some fried potatoes, and a can of whatever veggie we feel like. I think this comes out to be pretty inexpensive.
One of our favorite meals is tortilla roll ups. We use the largest tortilla size we can find, spread it with a mixture of cream cheese and ranch dressing, and top with shredded lettuce and any leftover meats and/or veges we have. We’ve also mixed the cream cheese with onions, onion soup, green chilis (canned) and have liked the results. Then roll up the torilla and cut in half. These are very filling. The biggest expense is the cream cheese, so I stock up when it’s on sale.
Ooo, my new favorite frugal recipe is Chicken Lime Tacos.
-Chicken breasts
-1 little Lime juice bottle (shaped like a lime in produce section)
-2 tbsp. chili powder
-1 cup of salsa (to use later)
Place Chicken breasts in crockpot. Mix Lime juice and chili powder and pour over chicken. (You might want to add a little water if you are using a large crockpot) Cook on low for 4-6 hours.
Remove chicken from crockpot and shred. Add back to crockpot along with 1 cup of salsa. Let cook until heated thoroughly.
Put meat in tortillas and top with desired toppings. We always have brown rice with this and put the extra juice on our rice. YUMMY!!
Oat Bran for breakfast! We buy bulk oat bran, mix 1/3 c. oat bran with 1/2 milk, 1/2 cup water and microwave for 2.5 minutes. Then we stir in 1 T. sugar, cinnamon, and a handful of chopped walnuts. Filling, decent for us and yummy!
We do stir-fry with left over chicken or shrimp, rice, and what every veggies we have! It’s a great frugal meal and uses up the leftovers!
Frugal should be my middle name! Ha ha. I love to find ways to provide delicious and nutritious meals on a budget. Here’s one of our favorites and this is an excellent time of year to try it!
Veggie Soup
1 lb. ground turkey
1 large can of stewed tomatoes
1 can sweet corn
1 can carrots
1 can green beans
1 can baby peas
2 cans whole potatoes
1 small can beef broth
1/2 cup butter
1/2 large onion diced
Combine all veggies into a large pot or crock pot and add can of beef broth. Let simmer on low for up to eight hours, increase heat for shorter cooking time. Brown ground turkey and add to pot before serving.
I have fond memories of eating this soup along with my dad’s famous (okay it’s really just White House brand) cornbread and a big glass of southern sweet tea.
This also stores very well in large quantities for an easy meal later in the week!
We all love breakfast for dinner! It wins hands down. Scrambled eggs (sometimes an omelet), turkey sausage links, and hashbrowns from the box. Easy, quick and very affordable.
We make creamed beef on toast when we are in a pinch and need something quick, cheap, and easy! I just make a rue with milk and some spices, add strips of beef (from the sandwich meat isle) and then pour over toast.
I make my own Chicken Pot Pies using leftover chicken and vegetables from the week.
2 cups shredded chicken
2 cans cream of chicken soup
3 cups frozen mixed vegetables
2 deep dish pie shells
Mix all ingredients and pour into a pie shell. Cover with remaining pie shell. Bake for about 55 minutes at 375 uncovered until the crust is golden brown and the inside is bubbling. If browning too quickly, put a piece of foil over the top.
Sounds like a neat book and thanks for the chance. I always turn to tacos or pasta. It usally costs me less than $5.00 to feed all 3 of us and I have leftovers for lunch the next day.
Sloppy Mac
1 # ground beef browned
1/4 c finely chopped onion- cooked with ground beef
Drain
Add 1 can tomato sauce
3 TB Brown sugar
salt and pepper to taste
1 TB chili powder
1 tsp oregano-
Add above ingredients to prepared box of Mac and Cheese. Serve
Rice salad. I cook white rice and let it cool, then add anything we have to it: tuna, tomatoes, corn, olives and add vinaigrette. It lasts for a few days and the longer you leave it in the fridge the better it gets.
Simple and quick
1 bag frozen ravoili
1 jar spaghetti sauce
3 cloves garlic
parm cheese sprinkle
moz cheese 2 cups
1 bag of frozen ravoili and boil them for about 10 mins.
Then take a 9×13 pan put them in and add spaghetti sauce, fresh garlic, parm, and moz cheese. Bake in oven for 20-25 mins, on 350.
What a great book. I would love to win it. We use alot of chicken in our house. I put chicken pieces in the crockpot and cook on low all day. Then when it is time for dinner, you can freehand the rest. A little of this, a little of that, add a salad and vegetable and you are done.
My favorite, super simple recipe is this:
boneless, skinless chicken breasts (1 lb-ish)
1-2 cans cream of chicken soup
1 c. sour cream
Cook chicken and soup in a crockpot on low 7-8 hours. Right before serving stir in sour cream. Yum! Serve with mashed potatoes and veggie of choice!
Thanks for the giveaway. This would be great!
French toast or german pancakes are always a hit for us.
