Frugal Momma’s Test Kitchen: One-Pan Chicken & Potato Bake

In past entries, I have mentioned the wonderful Kraft Food & Family Magazine. If you are not a subscriber to this magazine, I highly recommend it because the recipes are incredible. Despite the fact that they obviously include almost all Kraft products, many of the ingredients can easily be substituted with an off-brand of the same exact thing.

The fall issue was jam-packed with lots of great recipes for busy & tired mommies. I happened to have left the magazine out and my husband came across the magazine lying on our coffee table. He pointed to the front and said that he would love to try what was on the cover so we decided to give that recipe a shot.

The recipe was for a one pan dish and I love dishes that can easily be assembled and cooked in one pan. I have a really nice 9×13” stoneware dish that has a pretty serving basket that it rests in so I can just put this on the table when company comes without transferring anything to a serving dish. Fewer dishes equal less time in the kitchen and more time with my family, so I am always willing to give one of these recipes a shot.
Meijer had their bone-in chicken on sale for a $1 a pound last week and I stocked up and bought twenty pounds of chicken. Most of it was quickly processed with my Foodsaver in marinades (making for easy grilling), but I did keep one package just plain for casseroles.

This dish was delicious; unfortunately the potatoes did not cook as quickly as the chicken and ended up being a little too raw for our taste. Despite the beauty of this one dish wonder, next time I will place the potatoes on a separate cookie sheet and then place them with the chicken upon serving. It is possible that they cooked unevenly due to the placement of them rather than the cooking time.

This chicken is moist & flavorful. I do plan to make this recipe again and again because it is not only easy to make, but it is also a frugal momma’s dream with inexpensive ingredients & easy clean-up.

One-Pan Chicken & Potato Bake

4 bone-in chicken pieces (1 ½ pounds)
4 large potatoes cut into wedges
1/4 cup Kraft Zesty Italian Dressing (I used ½ cup because I wanted more flavor to the chicken & potatoes)
¼ cup Kraft 100% Grated Parmesan Cheese

Preheat oven to 400 degrees. Place chicken & potatoes in 13×9” baking dish. Pour dressing over chicken & potatoes; sprinkle with cheese. Bake one hour or until chicken is cooked through. Sprinkle with fresh parsley, if desired.
