Ham & Egg Casserole
All Recipes.com

1# sliced ham (lunch meat)
1 teaspoon mustard powder
½ teaspoon salt
4 eggs, beaten
2 cups milk
6 slices white bread, toasted & cut into cubes
8 ounces mild cheddar cheese

In a medium bowl, mix together mustard powder, salt, eggs, and milk. Add the ham (cut into cubes), bread cubes, and cheese, and stir to cat evenly. Pour into a greased 9x13” baking dish. Cover & chill in the refrigerator for eight hours, or overnight. Preheat oven to 350 degrees. Cover and bake 45-60 minutes. Uncover and reduce temperature to 325 and bake for an additional 30 minutes or until set.

Doritos Casserole
 

Bag of Doritos, any kind (I prefer either the Cool Ranch or the Cheese)
3-4 cups cooked ground beef
1 can cream of mushroom soup
1 can cream of chicken soup
1 can diced tomatoes
2 cups shredded cheddar or taco cheese
Layer a 9x13 greased pan with the following. Layer of crushed lightly chips, layer of chopped meat, another layer of chips, a layer of cheese, a layer of the soups and tomatoes mixed together (heat them lightly), and then top finally with a cup of chips and another cup of cheese. Bake the casserole at 350 for 25-30 minutes
Serves Six
Serve with lettuce, tomatoes, & sour cream for topping and the extra chips.

Chicken Lasagna
Best of the Best from Indiana

1 can cream of mushroom soup
1 can cream of chicken soup
1 cup Parmesan cheese
1 cup sour cream
¼-1/2 teaspoon garlic powder
1-3 cups cooked, diced chicken
8 ounces lasagna noodles, cooked & drained
2 cups Cheddar cheese

Mix together soups, Parmesan cheese, sour cream, garlic powder, pepper, & chicken. Spread 1//4 of the mixture in the bottom of a 13x9” pan. Alternate layers of noodles, chicken mixture, & shredded cheese 3 times, ending with cheese. Bake at 350 for 40-45 minutes or until heated through. Let stand 10 minutes before cutting.

Picnic Day: Honey Nut Chicken Sticks
30 Minute Meals

2 pounds chicken tenders
Salt and pepper
1 cup all-purpose flour
3 eggs
A splash milk
2 cups honey nut flavored cereal (recommended: Honey Nut Corn Flakes)
1 cup bread crumbs
1 tablespoon sweet paprika
1 tablespoon poultry seasoning
2 tablespoons grill seasoning (recommended: Montreal Seasoning)
1/4 cup vegetable oil, eyeball it
Preheat oven to 400 degrees F.
Season chicken tenders with salt and pepper. Place flour in a large shallow dish. Coat chicken in flour. Beat eggs and milk in a shallow dish. Combine cereal, bread crumbs, paprika, poultry seasoning, grill seasoning and vegetable oil in food processor. Transfer breading to a shallow dish. Place a nonstick baking sheet near chicken breading station. In batches, take flour coated chicken and coat in eggs then in breading and place on nonstick cookie sheet. When all the chicken has been coated, transfer to oven and bake 15 minutes, until evenly brown and cooked through. Cool and serve, or pack up for a picnic! This chicken may be served hot or cold.
Serve with a variety of cut cheeses, summer sausage, grapes, and grape tomatoes.

Ranch Chicken
6 bone in chicken breast halves with skins
½ cup ranch dressing
1 cup Italian breadcrumbs
½ cup grated parmesan cheese (freshly or packaged shredded)
1 t. sage
salt and pepper to taste
Marinade chicken in ranch overnight. Preheat oven to 450. Combine breadcrumbs, cheese, sage, salt, and pepper. Coat breasts in breading and place in 9x13 pan. Bake in oven covered for 20 minutes then reduce heat to 350 and bake for thirty minutes. If you use boneless skinless breasts cook them at 400 for 20 minutes and check for doneness.
Serves Six
Serve with rice pilaf (the boxed variety) & crescent rolls.

Rosemary Chicken
Rachael Ray’s 30 Minute Meals

4 pieces boneless, skinless chicken breast, 6 to 8 ounces each
2 tablespoons balsamic vinegar, eyeball it, just enough to coat chicken lightly
2 tablespoons extra-virgin olive oil
3 stems rosemary, leaves stripped and chopped, about 2 tablespoons
Salt and coarse black pepper
4 cloves garlic, cracked away from skin with a whack against the flat of your knife

Coat chicken in balsamic vinegar, then olive oil. Season chicken with rosemary, salt and pepper and let stand 10 minutes. Heat a medium nonstick skillet over medium high heat. Add chicken breasts and cracked garlic to the pan. Cook chicken 12 minutes, or until juices run clear, turning occasionally. The balsamic vinegar will produce a deep brown, sweet finish on the chicken as it cooks

Poppy Seed Chicken Casserole

6 boneless, skinless chicken breasts
1 can cream of chicken soup
1 (8 oz) container sour cream
8 oz (1 stack) of buttery round crackers
1 ½ T. poppy seeds
½ cup butter, melted

Preheat oven to 350. Place cooked diced chicken breasts on the bottom of a greased 9x13” baking dish. In a bowl combine soup and sour scream. Pour over chicken. Sprinkle on salt and pepper. Mix poppy seed and crackers. Sprinkle these on top. Drizzle melted butter or margarine over cracker layer. Bake covered for 30-45 minutes. Take off cover for the last five minutes. Let stand two to three minutes before serving.

Serves Six
