Does anyone have an abundance of garden zucchini? I did!  I was scanning the web for recipes and found out that you can shred the zucchini and drain it  (those things have a very high water content!)and freeze it in 2 cup portions.  Yesterday I froze 12, 2 cup portions. I made a zucchini crusted pizza the other day - it was good, let me know if you would like the recipe and this week I am making zucchini meatloaf and of course bread.

Wow, that is great that you can freeze that. I would have never known that.

Don't know if you guys know this about me or not, but I don't garden Smiley I have a black thumb...like, really bad!!

I have heard zuchinni is easy to grow though and that you can get a lot of it. Maybe next year this is something I could tackle? I have also heard that tomatoes are easy to grow too.

A zuchinni pizza? That sounds really interesting! Do share!

Zucchini is really easy to grow as well as tomatos.  This was our first year with a garden and if we can do it, anyone can.  Here is the recipe for the zucchini crusted pizza:

Ingredients:
Olive oil and flour for the pan
2 c packed grated zucchini (about 2, 7 inch zucchini)
2 eggs, beaten
1/4 c flour
1/2 c shredded mozzarella
1/2 c grated parmesan
Optional: pinches of baseil, marjoram, and/or rosemary
2 T olive oil
Topping suggestions: extra v olive oil, thinly sliced tomat, extra mozz/parm cheese, garlic, sauteed mushrooms, olives, pepperoni

Preaheat to 400; generously oil a 10 in pie pan / or cookie sheet with edges and coat lightly with flour.  Combine all ingred. & 1 T olive oil in a bowl and mix well.  Spread into the pan and bake for 35/40 minutes or until golden brown.  About halfway through the baking, brush with the remaining tablespoon of olive oil (optional.)  Remove from oven.  When it has cooled for about 10 minutes, use a spatula to loosen the crust from the pan, so it won't break later.  Top with your favorite pizza items and bake at 400 until heated through.
