Meal #1

Orzo with Spinach and Tomato

Serves 4

Steaks with Red Wine Sauce

Serves 4

Ingredients

  • 4 thinly cut steaks, any variety
  • 1 can of beef stock (low sodium is best)
  • ¼ cup of a good quality red wine
  • 2 tablespoons olive oil
  • 2 tablespoons of butter
  • 2 tablespoons of flour
  • Salt and pepper

Preheat the pan and add olive oil. Season steaks with salt and pepper. Place steak in the pan and cook for about four minutes on each side or until desired doneness. If you buy a thicker cut steak, the cooking time will be longer. Remove steaks and cover with tin foil. Bring the heat down to medium low and add butter to the pan. Add flour to the pan whisking the entire time to prevent any lumps in the sauce. After about one minute, add the wine and allow the alcohol to cook out for about one minute, and then add the beef broth. Allow the sauce to thicken for about three minutes and then put steaks back in the pan to get them warm again and covered in the sauce. Serve steaks with sauce poured over them.

Broccoli

Serves 4

Ingredients

  • 1 head of broccoli
  • Salt to taste

Bring a pot of salted water to a boil. Trim and wash broccoli. When water has been brought to a boil, then add broccoli to the pot. Cook for three minutes. Drain broccoli. Place broccoli back in the hot pot and put the lid on. By the time the rest of your dinner is ready you will have the perfect broccoli- perfect color and texture.

Amy's Bacon Cheeseburgers

Serves 4

Ingredients

  • 1 pound ground beef
  • 1 egg
  • 1 package dry onion soup mix
  • ½ cup cheddar cheese
  • ½ cup mozzarella cheese
  • 1 t. oregano
  • 8 slices of cooked bacon

Mix all ingredients together and form into patties. Grill according to grill instructions. I usually throw these on the George Foreman grill for ten minutes to cook quickly. Top with bacon.

Chicken and Noodle Soup

Ingredients

  • Leftover roasted chicken
  • 1 large can of chicken stock
  • 2 cups celery
  • 2 cups carrots
  • 1 package of egg noodles
  • 3 sprigs of fresh rosemary or ¼ teaspoon dried rosemary

Shred up the leftover roasted chicken into bite size pizzas. Chop carrots and celery up very thin so that they will cook quickly. Coat the bottom of a large pot with extra-virgin olive oil. Add celery and carrots and cook for about five minutes or until they look fully cooked. Add chicken stock, chicken, and fresh rosemary bundled with kitchen twine to the pot. Bring the soup to a boil and then add egg noodles. Cook for about eight to ten minutes or as long as is instructed on the back of the package.

Serve with a salad and bread.
