Delicious Oreo Biscotti
I didn't get to do as much holiday baking as I would have liked to this year, but I did manage to squeeze in a couple of yummy treats. These Oreo Biscotti were so delicious and tasted so much better than the ones that they sell in the store.This was my first attempt at making biscotti. It has been on my list of things I would like to try making and this recipe looked super easy and tasty too.
I crushed my Oreo cookies in a zipper bag and used my rolling pin as a hammer to break them. I baked the cookies and then gave them ten minutes to get cooled off. Then I cut them with my bread knife and baked them again, letting the cut side get its turn to bake. It resulted in a yummy cookie, perfect for dipping in your coffee or milk.
I drizzled the cookies with a little melted chocolate chips (with a teeny bit of shortening to thin it out). It was a little gloppy in the beginning, but I got the hang of the drizzling eventually.
I packaged these up in a promotional tin that I had decorated. We get a lot of promotional materials from companies and I had a tin from Reynolds that I wanted to reuse. I took a page out of Meredith's book and covered the top with a circle of red & white wallpaper. I tied a bow on it and tucked the cookies inside.
For our sweet postal lady, I purchased a little mini bucket from Dollar General. I used more of the paper inside of that and tucked them in the bucket with a note from our family.
The cookies were a huge hit and I only ended up with a few to take home after our family get together. The last few were ate by me- a nice reward for all my hard work!
