Banana Pancakes

These taste just like a yummy slice of banana bread- enjoy!

Banana Pancakes

1 cup flour
1 tablespoon white sugar
2 teaspoons baking powder
¼ teaspoon salt
1 egg, beaten
1 cup milk
1 teaspoon vanilla
1 teaspoon cinnamon
2 tablespoons vegetable oil
1 ripe banana

Combine flour, white sugar, baking powder cinnamon, & salt. In a separate bowl, mix together egg, milk, vegetable oil, vanilla, & bananas. Stir flour mixture into banana mixture; batter will be slightly lumpy. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop batter onto the griddle, using approximately ¼ cup for each pancake. Cook until pancakes are golden brown on both sides; serve hot.

Yield: Four Servings

Serve with warmed syrup & orange juice

    This is a very delicious pancake recipe! I make a similar recipe also using a mashed banana and chopped walnuts; cook as above. Serve with additional sliced bananas and chopped walnuts – better than IHOP! (and cheaper) :)
