Chicken and Rice Dinner
4 boneless, skinless chicken breasts
1 T. of any type of oil you have on hand (olive, vegetable, canola, etc.)
1 can cream of chicken soup
1 ½ cup water
½ t. pepper
2 cups instant rice (uncooked)
2 cups fresh/frozen broccoli
Heat oil in skillet. Add chicken and cook until brown. Remove chicken and add soup, water, paprika, and pepper; stir. Heat to a boil. Stir in rice and broccoli. Top with chicken. Season chicken with paprika and pepper; cover. Cook on low heat for five minutes.
Serve this meal with a tossed salad.
Meal #14 - Slow Cooker Night
Slow Cooked Pork Chops
4 pork chops (approximately 3 pounds)
1 package onion soup mix
1 cup chicken broth
Place pork chops in the slow cooker. In a separate bowl, combine soup mix & chicken broth, stir. Pour over chops. Cook on low heat for six to eight hours.
Serve with mixed vegetables & baked potatoes.
